Pea and goat cheese crostini

 

The health benefits of this Pea and Goat Cheese Crostini far surpasses the satiation of hunger. It’s the Vitamin K for us!

The K Vitamins are fat soluble, and are necessary for normal blood clotting. They are also used to treat the toxic effects of anticoagulant drops, such as warfarin, and in people who have poor ability to absorb fats.


Ingredients

  • 1 cup of fresh peas

  • 1 tbsp fresh mint

  • 1/4 tsp red pepper flakes

  • 1 tbsp ponzu sauce

  • 1 tsp olive oil

  • Salt & black pepper for taste

  • 1 tbsp goat cheese per crostini

  • Rosemary for esthetics

  • 1 baguette


Pulse your ingredients until you have a nice, course texture. Just about 3-4 pulses should be enough.

Preheat over to 400 F. Slice your baguette into 12-16 thin slices and toast your baguette for 6-8 minutes.

Assemble the pea and mint crostini by spreading 1 tbsp of goat cheese over sliced baguette. Then spoon pea-mint mixture on top of the goat cheese.

Add a bit of goat cheese over this mixture and sprinkle with a few red pepper flakes and add Rosemary for garnish. Sprinkle oil oil and enjoy.

Vitamin K occurs naturally in foods such as wholegrain cereals as Vitamin K1. Synthetic K is known as K3. However, we can get this Vitamin naturally in cauliflower, spinach and peas.
